Obex implementations are very different and not all devices respond exactly what you expect them to respond. There is an example of how to save devices in the ObexFTPClient sample. You could modify the sample to save the services instead.

The "secret" lies in using Address and ConnectDevice/ConnectService instead of using ServiceDiscovery.

There is currently no support for an Obex server service in BlueTools.

You can however implement the server yourself by passing the appropriate bytes as response to those coming from the client.
